     THIS MONTH’S WINNER
SCOTT LUTOCKA
Facilities & Sustainability Manager Piazza Produce & Specialty Foods, IN
Scott Lutocka has dedicated more than 35 years to the foodservice distribution industry. But it’s his work over the past decade that he is especially proud of.
Lutocka has been on the front line in leading Piazza Produce to achieve zero waste status, with 90 percent or greater waste diver- sion from landfill or incineration. In 2012, Piazza Produce became Indiana’s first U.S. Green Building Council True Gold Level-cer- tified zero waste business.
At Piazza Produce, all employees are members of Lutocka’s “Green Team” and
help in recycling, reusing and reducing waste on site.
“I am passionate about zero waste,” says Lutocka. “Zero waste is a goal that is ethical, economical, efficient and visionary.”
Lutocka’s resume is impressive. He started at Indianapolis Fruit Company before its merger with Piazza Produce in 1997 and has served several roles. He currently is a Business Advisory Council member to the USGBC TRUE zero waste program; the Pro*Act USA Greener Fields Together Supply Chain Sustainability Advisory Council; and serves as Pro*Act USA’s Sustainability Coordinator for Piazza Produce, LLC.
He reads Produce Business to keep up with trends. “I always look to this publication for the latest news, coverages on governmental policies, new product introductions, as well as enjoying learning about what others are doing in our industry. Few industries operate as quickly as the produce industry.”
