In the ever-changing world of produce, there need to be constants. Promises made must be kept. Chaos must be minimized. Stable forces are sometimes as important as movers and shakers.
Chris Eliopulos has been one of these stable forces. He has been the director of produce for Sysco in Des Plaines, IL, for the past 23 years. It’s a job that requires an ability to think on the fly, to react quickly with skill and to be on top of just about everything.
“I am in one of the largest Sysco oper- ations in the country, and it is always a struggle to maintain quality and freshness with so much going on here on a daily basis,” he says. “We have large volumes of product arriving and shipping daily.”
But it’s something that he excels at. He admits he enjoys “the constant energy and excitement of the produce industry. It is never boring.”
His current role is far different from his first job in produce in the 1970s, when Elio- pulos was unloading railcars of potatoes for Chicago wholesaler Blue Island Foods (which Sysco purchased in 1986). Eliopulos left that position in 1981 to start his own company selling produce to restaurants. In 1995, the vice president of merchandising at Sysco, Chuck Staes, approached him about coming to work for the company. He took the job and never looked back.
As with many industry leaders, Elio- pulos is constantly looking for insight and the latest trends in produce. “For at least 20 years” he has turned to the pages of Produce Business. “The articles and ads are always something I look at. I am always looking for something new or a better way.”
